- 1 cup quinoa (rinsed, not cooked)
- 1 sweet pepper
- 1/2 onion
- 1 can chili beans (drained)
- 1 can mixed beans
- 1 can corn
- 1 can rotel (or diced tomatoes with chili peppers)
- 1 mango (peeled and cubed, small cubes)
- 3 Tbsp. honey
- 2 Tbsp. taco seasoning
- 2 tsp. cumin
- 1 tsp. curry (optional, I just feel it takes the chili up a notch)
- 1 cup soy sauce
- 1/4 cup barbecue sauce (Stubb’s, we’ve found that Stubb’s Original has the least amount of sugar compared to most bbq sauces.)
