- 3 garlic cloves (finely minced)
- 1 white onion (small, diced)
- 1 cup mixed vegetables (fresh or frozen, thawed first)
- 2 large eggs (lightly beaten)
- 3 1/2 cups cooked quinoa (preferably day old & chilled, see notes below for how to cook in Instant Pot)
- 2 Tbsp. low sodium soy sauce (for gluten free use tamari or coconut aminos)
- 2 tsp. teriyaki sauce (for gluten free version - use gluten free teriyaki or hoisin sauce instead)
- 1 tsp. mirin (rice wine or dry sherry can also be used in a pinch)
- 2 green onions (chopped)
- salt
- black pepper
- red chili flakes (Dried, or Sriracha, optional, to taste)
- cooked chicken (optional)
- beef (optional)
- quinoa (For Instant Pot)
- 2 cups dried quinoa
- 2 cups water
