    I added 1 more egg to the Recipe (5 total) and made it vegetarian with mushrooms instead of meat. I sautéed the mushrooms before adding them in with a little purple onion and salt & pepper. It was missing a little kick/ spice for me.. next time I would add a little hot sauce to the mix before pouring into the muffin tins. Overall, a really nice breakfast mini-meal to have on the go!
