- 3/4 cup quinoa (well rinsed and drained)
- 1/2 cup mayonnaise ({Or use 1/2 mayo and 1/2 Greek yogurt like I did to lighten it up.})
- 2 tsp. lime juice (freshly squeezed)
- 1 tsp. lime zest (finely grated)
- 1/2 lb. smoked trout
- 3 cakes
- 1/2 cup green onions (finely chopped, about 3)
- 1/2 cup cilantro leaves (finely chopped)
- 2 large eggs (lightly beaten)
- 2 serrano chile (minced, {Remove veins and seeds for less heat. I did NOT do this!})
- 1 tsp. lime zest (finely grated)
- 1/2 tsp. ancho chili powder
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. fine sea salt
- 2 Tbsp. virgin olive oil (extra-)
