Excellent, quick and tasty recipe. My preference is to add more spice and shredded carrots. I would also go a bit dryer next time on the quinoa to help absorb some of the juices that release from the tomatoes during the baking process.

Excellent. Flavorful but too much hot spicy seasonings. Cut it down if you're sensitive to spicy food.
