Description
This is an andean dish. Plenty of protein! It can be served with rice, sliced potatoes or by itself.
Ingredients

- 1 cup quinoa
- 1 cup evaporated milk
- 1 pinch salt
- 1 tsp. garlic paste
- 1 Tbsp. chili paste (red, non-spicy)
- 1 onion (medium, diced)
- 3 Tbsp. olive oil
- 1 cup queso fresco

Directions
- Wash the quinoa at least 4 times, until all the sap is gone.
- Add the quinoa to 2 cups of water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes.
- Drain the quinoa, and set apart.
