- 3 quinces
- lemon juice
- 2 Tbsp. sugar
- 1/2 tsp. ground ginger
- 100 grams flour
- 50 grams sugar
- 50 grams butter
- 1/2 tsp. ground ginger

Directions
- Preheat oven to 360°F.
- Rinse and peel the quinces. Quarter and thinly slice. Sprinkle with a few drops of lemon juice. Add 2 tablespoons of sugar and 1/2 teaspoon of ground ginger, and mix well. Place this mixture on the bottom of a glass baking dish.
- To make the crumble, combine the flour, 50 grams of sugar, cold butter (cut into cubes), and 1/2 teaspoon of ginger. Mix with your hands until crumbly. Cover the quinces with this mixture, and bake for about 25 minutes until golden.
- Serve warm, plain or with a scoop of vanilla ice cream.
