Description
This Quince Compote recipe makes a sweet compote that you can easily add to pastries or cakes. Made with fresh quince, this compote is sweetened with sugar and spiced with cinnamon sticks and cloves. This compote make a great autumn filling for pastries or to use as a jam layer between cake layers. You can also use this Quince Compote as you would a jam and spread a layer on your morning piece of toast.

- 1 kg quince
- 800 grams sugar
- 10 cloves
- 5 cinnamon sticks

Directions
- Peel the quince and cut each fruit into wedges.
- Take half of the quince peels and wrap them in a bundle inside of gauze or cheesecloth.
- Place the quince in a nonstick pot and cover with water. Add the sugar, cloves, cinnamon sticks, and the bundle of skins. Cover and bring them to a boil. Simmer until the fruit is soft.
- Once soft, remove the lid and continue to simmer until the liquid has reduced and the compote has a rich color, as if it was cooked in red wine.
