- 4 carrots (peeled and sliced)
- 1 eggplant (large, or 3 small, white or “zebra” are especially sweet)
- 1 onion (large, sliced)
- 1 kohlrabi (large, cut into chunks)
- 3 heads baby bok choy (or 1 large, sliced)
- 3 cups broccoli florets (and sliced stems)
- 8 oz. water chestnuts (rinsed and drained)
- 4 cloves garlic (chopped)
- 1 inch fresh ginger (piece, peeled and sliced)
- 1/2 orange (large)
- 2 tsp. reduced sodium tamari (or soy sauce)
- 2 tsp. toasted sesame oil
