- 6 oz. baby spinach (fresh)
- 1 Tbsp. olive oil
- 2 lb. pork tenderloin (or boneless, skinless chicken breasts, cut into 1/2-inch cubes)
- 1/2 tsp. salt (I use coarse, kosher salt)
- 1/4 tsp. black pepper (I use coarsely ground black pepper)
- 1 cup red bell pepper (chopped, about 1 large pepper)
- 2 cups grape tomatoes (halved)
- 1/2 tsp. dried oregano
- 2 cloves garlic (finely chopped, or 1/2 teaspoon garlic powder)
- 1 cup feta cheese (crumbled)
