    Great recipe. Very easy and not labor intensive. I used boneless skinless chicken breasts and with timing and temperature they turned out very dry and the carrots burned. Will need to adjust next time!

    This is one of my favorite meals to make. I trim off some of the extra skin on the thighs to reduce the fat in the tray. I cut the small potatoes in half lengthwise and lay them flat. Not much else is changed. The potatoes and carrots are seasoned and lightly oiled prior to putting them in the tray. I cover it all with foil and cook, and remove the foil and allow the skin on the chicken to get crunchy. It's a great and simple meal with plenty of leftovers.

    This was everything it was billed to be. Simple, quick, tasty and easy clean-up. I used a mesquite seasoning that was wonderful. The carrots and potatoes were perfect, as was the chicken. Will definitely do this again.

    This turned out great I used McCormick Kickin’ Chicken to add a little spice. Even my picky husband likes this ( though he did scrimp on the carrots)!

    Super simple, yet tasty. The Kirkland Sweet Mesquite seasoning is a good choice. Be careful, though. Too much of a good thing ups the salt content. Definitely a FAMily Favorite.

    Both husband and I loved it! Now that l have made it, it will be part of our rotation. I used skinless, boneless thighs and had a nice crust on both sides of chicken. I turned the chicken over at last 15 minutes.

    Absolutely amazing!! I actually used boneless skinless thighs but this turned out great! Just minced garlic, salt and pepper and it was delicious!!

    Super easy to prep and clean, enough wiggle room in the recipe to personalize the flavor. Very much enjoyed.
    This was great! If you want more caramelized carrots use thinner carrots

    amazing! pleasently surprised! i used generic chicken seasoning and a bit more oil. Also added some cloves of garlic to the baking tray to give some more garlic-y taste to the veggies

    Very easy to make and can be modified easily by using different spice combinations. Quick and easy with minimal cleanup.
