Description
Tender pork chops, crisp roasted potatoes, and a colorful array of vegetables in a complete and easy dinner. Made all on one sheet pan, so that even cleanup is fast and easy! The recipe is a Yummly original created by Sara Mellas.

- 1 lb. mixed vegetables (like broccoli, cauliflower, bell peppers, carrots, zucchini, etc.)
- 1 Tbsp. extra-virgin olive oil (for vegetables)
- 1/4 tsp. salt (for vegetables)
- black pepper (to taste, for vegetables)
- 4 pork loin chops (about 1 inch thick)
- 1 tsp. extra-virgin olive oil (for pork chops)
- 3/4 tsp. salt (for pork chops)
- black pepper (to taste, for pork chops)
- 1 tsp. garlic powder
- 1 tsp. Italian seasoning
- 1/2 tsp. paprika

Directions
- Preheat the oven to 400°F.
- Line an extra-large baking sheet with parchment paper.
- Cut the potatoes into 3/4 inch pieces and transfer to a gallon-sized zip-top bag.

I absolutely love this easy recipe! I had to cook the pork a bit longer than listed, but overall it was great! I added garlic salt to the potatoes and meat as well. It was a hit with my spouse too. I will make this again for sure!

Great flavor and simple directions. I think the meat would have benefited from a marinade to moisten but other that that it was great!

Brined the prok chops for 2 hours. Used traeger seasoning for pork chops and used this receipes seasoning on vegetables. Came out perfect! Wife and I are not fans of prok chops but we loved it. Also helped that I did everything in my smoker instead of the oven.

This was delicious. I actually used California medley frozen veggies and added some onion and red peppers to it. My potatoes didn't cook as fast as said on here so might want to allow a little extra time for them especially the first time you fix it because every stove is a.little different.

Good. I used thick pork chops so I baked everything for the same amount of time. Turned out fine.

Is tasty! My pork chops were unfortunately frozen so I had to add one more step before I added them to the sheet pan. But VERY tasty!

Great dish! Being on a low-salt diet, I was concerned about the somewhat high sodium content listed. However, I substituted Mrs. Dash's garlic & herb blend wherever the recipe called for salt and it came out great. My pork chops were on the thinner side (about 1/2"), so they cooked faster than expected and were a bit dry. Next time I'll wait a bit longer to add them to the potatoes and veggies, ,but keep the overall cooking time the same.

It was really good. I added some of my spices to it and didnt have all the vegetables. But it was still amazing.

Wonderful! Our chops were thin so only cooked them about 10 minutes, a hit with whole family. I’m not big on potatoes, but they were delicious

This recipe was so easy and very tasty. I loved the step-by-step video. I used red potatoes, squash and onion. The pork chops were moist, and this is definitely a keeper.

Everyone enjoyed this recipe. The dish duty person like the fact there was very little cleanup. I will make this again changing up the spices for the chops.

Delicious, and super easy to make! I didn't use as much salt as if called for because we're watching our sodium and it still came out ok!
