- 1/2 bone in chicken breast (roasted and diced)

- 1/2 cup pasta (boiled and drained)
- 2 Tbsp. roasted sunflower seeds (honey)
- 1/4 lb. greens (spring mix)
- 1 Tbsp. Dijon mustard
- 2 Tbsp. apple cider vinegar
- 1 1/2 tsp. honey
- 1/4 cup extra-virgin olive oil

- 1/2 lb. fingerling potatoes (roasted and diced)
- 1/4 lb. collard greens (sliced thin and tossed in honey mustard)
- 1 hard-boiled egg (diced)
- 1/2 bone in chicken breast (diced and roasted)

- 2 Tbsp. gorgonzola
- 2 slices thick cut bacon (cooked and chopped)
