Description
Tender slices of eggplant and creamy dollops of ricotta make these naan pizzas perfect for when you're craving Eggplant Parmesan with a little extra something. The recipe is a Yummly original created by Sara Mellas.

- 4 pieces naan (small)
- 2 tsp. extra-virgin olive oil
- 1 small eggplant
- 4 basil leaves
- 2/3 cup pizza sauce (or marinara sauce)
- 1 cup mozzarella cheese (or shredded pizza blend cheese, 1 cup is 4 oz.)
- 4 oz. ricotta cheese (4 oz. is 1 scant cup)
- 2 Tbsp. shaved Parmesan cheese (for serving)

Directions
- Preheat oven to 425°F.
- Line a baking sheet with parchment paper.
- Arrange the naan on the baking sheet. Drizzle an equal amount of the olive oil over the surface of each piece.

Good and easy, but I have to reduce oven time next time for Whole Foods naan - came out with the bottom slightly burnt at 14 mins - 425 F.

I am diabetic and didn't want the carbs in the naan.
I used the slides of whoever as the 'crust'. Didn't have much sorella so I used medium cheddar. Attorney dash of garlic powder I have fresh basil plants that I dried out some of the leaves and put that on as well. They are wonderful. these recipes just give you an idea of what to use you can always substitute whatever you like whatever you don't like leave it out just get creative. you never have to follow a recipe item-by-item unless it's something like a baked good then you're going to want to follow the recipe.

Super yummy. Instead of adding ricotta in addition to mozzarella and parmesan, i just added the two and it was plenty. Then, you can add any other toppings you prefer! the eggplant was a good one though.
