Description
Classic Vietnamese pho is all about the long-simmered hearty broth made with multiple cuts of beef. In this quick version, store-bought stock is infused with lots of aromatics as it simmers, making the whole dish one you can prepare in an hour. If you have an Asian grocery nearby, by all means buy the beautifully sliced thin-cut beef they often carry instead of cutting it yourself. The recipe is a Yummly original created by Tina Ujlaki.

- 1/2 lb. beef round (also called London broil, or beef tenderloin, in one piece)
- 1 cinnamon stick (3 inches)
- 10 whole cloves
- 2 tsp. fennel seeds
- 2 tsp. coriander seeds
- 10 black peppercorns
- 1 onion (halved and then sliced crosswise)
- 1 piece fresh ginger (2 inches, cut into thick coins)
- 1 Tbsp. vegetable oil
- 2 qt. beef broth
- 1 1/2 Tbsp. fish sauce (Thai or Vietnamese)
- 3/4 tsp. salt (or to taste)
- 1/2 tsp. ground black pepper (or to taste)
- 6 oz. rice noodles (dried; thin or thicker)
- 1 1/2 cups mung bean sprouts (fresh)
- 12 sprigs fresh mint (large)
- 12 sprigs cilantro (large)
- 12 sprigs basil (large; Thai basil or regular basil)
- 1 jalapeño chili (thinly sliced)
- 1 Fresno chili (or red jalapeño chili; optional, thinly sliced)
- 2 limes (cut into wedges)
- Sriracha hot sauce (for serving)

Directions
- Freeze beef just until firm enough to slice thin, about 45 minutes.
- Using the side of a chef’s knife, lightly crush cinnamon stick and cloves on a work surface. Lightly crush fennel seeds and coriander seeds. Coarsely crack peppercorns.
- Cook onion and ginger in vegetable oil in a large pot over high heat, stirring frequently, until well browned, 4-5 minutes (reduce heat if they start to brown too quickly). Add cinnamon stick, cloves, fennel and coriander seeds, and peppercorns to pot and cook, stirring, until fragrant, about 2 minutes.
