- 3 sprigs fresh oregano leaves (or both! 2 Tbsp. for cooking, plus extra for garnish.)
- 15 oz. chickpeas (rinsed and drained)
- 14 oz. diced tomatoes
- 9 oz. frozen artichoke hearts (thawed and chopped)
- 8 pitted kalamata olives (chopped)
- 1 Tbsp. red wine vinegar
- 1 pinch salt (pepper, and red pepper flakes)
- 2 Tbsp. fat free feta cheese (crumbled)
