- 2 Tbsp. crunchy peanut butter (room temperature, crunchy for texture)
- 4 Tbsp. hot water (boiling)
- 2 Tbsp. less sodium soy sauce (sub with tamari to make it gluten-free)
- 4 Tbsp. tamarind concentrate (you can use water and a sweet vinegar like balsamic but will have to adjust the quantity)
- 1 Tbsp. raw cane sugar (or other sweetener)
- 1/8 tsp. kala namak (black salt, optional)
- 100 grams rice stick noodles (or glass noodles)

- 1 glug corn oil (sub with any other neutral vegetable oil)
- 1/2 head broccoli (chopped into very small florets)
- 250 grams firm tofu (packet of, squeezed to remove some water, then cut into small cubes)
- 2 small carrots (peeled and grated coarsely)
- 2 spring onions (medium, sliced, keep some of the green separate to serve)
- 2 garlic (big cloves of, halved then sliced)
