Added 1/4 cup sourgum and reduced sugar. added 1/2 cup applesauce could use more, or oil. Made in large ring cake pan, loved the density.

needed a recipe to use up the remaining kabocha puree i made.
halved the recipe for just 1 loaf!
only used 3/4 cups of sugar and 7tbsp butter.
added chopped almonds and chocolate chips.
forgot to add water, but it turned out perfectly!

Love! The fluffiest quick bread I think I’ve ever made. I added walnuts and chocolate chips, and we use erythritol instead of sugar. The batter was enough for a 9x13 (recipe says 2 loaf pans) and it baked up perfectly in 55 minutes.

So yum! Easy to follow recipe. I only put 1 cup of sugar and a drizzle of honey, because I found 2 cups to be atrocious!

Amazingly moist and delicious! I’m not usually a fan of anything pumpkin but this recipe is going into my favorites pile. I altered the recipe by adding pecans for the extra texture and crunch.

I just made this recipe tonight, and my roommate and I LOVE it! Not only was it super easy to make, but it smelled so good! The entire apt had a sweet, pumpkin smell! I didn't have a cup of butter, so I substituted butter with a 3/4 cup of pumpkin puree (yes, I put EXTRA puree, which happens to be a healthier alternative). I also didn't make the pumpkin puree in the recipe. I used canned pumpkin puree. I'm also excited that I have two loaves of these! I can't wait to share this with coworkers, family, and friends! They'll love this!
