- 2/3 cup vegetable broth
- 1 chipotle pepper (from a can)
- 1 Tbsp. adobo sauce (the sauce that comes with canned chipotle peppers)
- 3 Tbsp. olive oil
- 3 Tbsp. gluten free all purpose flour (use regular all-purpose flour if not gluten free)
- 4 tsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1 tsp. granulated garlic
- 1 tsp. salt (add more if necessary)
- 1 Tbsp. dark muscovado sugar (optional)

During COVID lockdown I started cooking a LOT. I had never made enchiladas, and decided to just make the sauce as well, and I am so glad that I did! I have never used store bought, so I have nothing to compare it to, but this is amazing and I try to NEVER run out. I make a double recipe and freeze some so that it is always ready. The recipe is easy, it costs pennies, and is delicious.

I will never buy store bought again. This is easy and great flavor. I used fire roasted tomatoes to make it even more flavorful. This recipe is an absolute must keep!

Excellent! I had leftover smoked chicken so I decided to make some chicken enchiladas.

Overall I did like the recipe. I added my own touches to It and I was very tasty and fragrant. I also used tomato sauce which eliminated the need for flour.

The sauce tasted good, but a little thicker than what I'm used to, with a gravy-like consistency. My husband thought it tasted bitter. I may try a different recipe next time.
