    Turned out great. I doubled the sauce though and next time I’ll add more salt and drain more thoroughly by squeezing

    First thing I note is that the process of salting the cucumbers is just like when I make traditional fermented cabbage kimchi. However, this recipe states “drain cucumbers” after they sit the 30 minutes in salt. This salt really needs rinsed, then drained, or your finished product will be too salty IMHO. Rinsed mine, then let sit to drain off really well before proceeding. All in all was easy and very tasty.

    This was very easy and extremely delicious. Not too sweet not too tangy. Everyone loved it and it was so fast. Even better the next day, leftover for lunch.

    Without salt and fish sauce a plain salad with rice vinegar is nicer.
