- 1 Tbsp. coconut oil (or olive oil)
- 1 1/2 tsp. cumin seeds (scale back a little if you’re not crazy about cumin)
- 1 yellow onion (chopped)
- 1 Tbsp. minced fresh garlic (or pressed, about 5 cloves)
- 1 Tbsp. minced fresh ginger (peeled and, about a 1-inch piece)
- 1 serrano pepper (green, minced, seed it first if you want to tame the spice level)
- 1 1/2 tsp. Garam Masala (or tikka masala)
- 1 1/2 tsp. ground coriander
- 1/2 tsp. ground turmeric
- 3/4 tsp. fine grain sea salt
- 1/4 tsp. cayenne pepper (optional)
- 28 oz. whole peeled tomatoes (with their juices)
- 2 cans chickpeas (14 ounces each, or 3 cups cooked chickpeas, drained and rinsed)
- 1 cup brown basmati rice (uncooked, for serving, rice is optional, I like to cook extra rice to have on hand for other meals)
- lemon wedges (for garnishing, optional)
- fresh cilantro (chopped, for garnishing, optional)

A new favorite! Ended up using curry instead of garam masala and was still delicious

I didn’t use every spice the recipe called for and added a bit of curry. Came out great! Just did it to my taste.

I ended up putting it in a blender and then adding coconut milk to it because it was very chunky and thick, it needed a lot more spices so I doubled up on the turmeric, coriander, and masala. It was good after all that

Absolutely delish! Really I’m new to vegan trying this and that so I made half recipe just in case! I love it and today I’m making another batch so I can freeze some for later. I did put very little fresh chile but added Ortega canned dice chiles.
