Quick and delicious quiche made with vegetables and feta cheese. A could way to recycle cooked vegetables!
Ingredients

4 SERVINGS
- shortcrust pastry (Ready to roll)
- 1/4 cup asparagus (blanched, frozen is good too)
- 1 cup asparagus (steamed)
- 1/4 cup peas (blanched)
- 1 Tbsp. mint leaves (chopped)
- 1 Tbsp. chopped parsley
- 4 spring onions
- 1 egg (and 2 egg yolks)
- 200 mL single cream
- 2 Tbsp. grated Parmesan cheese
- 1/4 cup feta cheese (or blue cheese if you prefer, optional)

Directions
- Preheat oven to 180ºC, gas mark 4.
- Line a 20cm tart tin with the pastry and place in the fridge while you prep the rest of the ingredients.
- Place the egg, the egg yolk and cream in a bowl, season with salt and pepper and whisk well.
