- 1 handful grated cheese (we use a mix of swiss & gruyere)
- 2 asparagus spears (shaved with a veggie peeler)
- 1 handful fava beans (leaves, you can use spinach or kale instead)
- 1/2 lemon (zest of, use a cocktail zester to get beautiful & robust curls)
- fresh mozzarella (A ball of, torn, since you are being healthy, why not be cheesy?)
