  • 1 1/2 cups self rising flour
  • 2/3 cup granulated sugar
  • 8 tablespoons butter (at room temperature)
  • 3 eggs
  • 1/4 cup milk
  • 2 tablespoons currants
  • powdered sugar (to dust)

    Directions

    1. Preheat the oven to 350°F. Line two 12-cup muffin pans with paper liners.
    2. Sift flour into a medium bowl. Add sugar, butter, eggs and milk. Beat with an electric beater on medium speed for 3 mins until smooth and pale. Stir in currants. Spoon into muffin cups.
    3. Bake, 15 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Dust with powdered sugar to serve.
