We love purple potatoes! My son loved this so much there were no leftovers! Could have used another egg. We didn’t have pancetta or ham so we used Tofurky Deli Slices. It kept sticking to the pan, so if you aren’t vegetarian, use real ham/lunchmeat. Instead of powder, we used minced garlic and frozen chopped onions.
