- 2 Tbsp. oil (butter, regular or ghee)
- 1 medium onion (finely chopped)
- 1/2 tsp. cumin seeds
- 1 inch ginger (piece of, finely chopped)
- 2 garlic cloves (finely chopped)
- 1 tsp. ground coriander
- 1/4 tsp. ground turmeric
- 1/2 tsp. Garam Masala (optional but traditional)
- chile powder (Ground, to taste, I started with a 1/2 teaspoon, but I have to keep things weak for kids)
- 1 cup tomatoes (finely chopped or pureed, fresh or from a can)
- 1 tsp. fine sea salt (plus more to taste)
- 1 cup black lentils (dried)
- 4 1/2 cups water (plus more to taste)
- 4 tsp. butter (salted is lovely here)
- 2 Tbsp. heavy cream
- 1 handful chopped fresh cilantro
