- 1 cup black chickpeas (Kabuli Chana)
- 1/4 tsp. baking soda
- 1 tsp. salt
- 2 tea bags (if you don't have tea bag, then take a white cloth and tie some tea into it)
- 1 1/2 cups water (to boil chickpeas)
- 1 onion (large, ground coarsely in a blender)
- 2 Tbsp. oil
- 1 Tbsp. ginger garlic paste
- 4 tomato (blanch, remove skin and puree)
- 2 green chile (finely chopped)
- 1 tsp. chili powder
- 1 tsp. coriander powder
- 1 tsp. cumin powder
- 1 tsp. masala (Chole, Use any brand)
- 1/2 tsp. garam masala (powder)
- 2 tsp. amchur (powder, dry mango powder)
- salt (Required, to taste)
- 3 Tbsp. coriander leaves (finely chopped, divided)
- seasoning
- 1 inch cinnamon stick
- 3 cloves
- 1 black cardamom
- 1 star anise
- 1 bay leaf
