- 10 large garlic cloves (peeled)
- 15 grams ginger (piece peeled, cut into large pieces)
- 100 mL vegetable oil (or 60 ml, ¼ cup ghee or some of each)
- 1 onion (medium, finely chopped)
- 3 medium tomatoes (not too ripe, cut into thin wedges)
- 2 green chillies (left whole and pricked with the tip of a knife)
- 2 Tbsp. ground coriander
- 2 tsp. ground cumin
- 1/2 tsp. ground turmeric
- 3/4 tsp. chilli powder
- salt (to taste)
- 750 grams chicken pieces (bone in, skin removed)
- 1 1/2 tsp. Garam Masala
- coriander leaves (handful chopped, and stalks, plus extra leaves, to garnish)
- chapatti (parantha, or pilaf, to serve)
- 5 cms cinnamon stick (piece)
- 3 black cardamom pods (large)
- 4 green cardamom pods
- 4 cloves
- 2 fresh bay leaves

ive been making a few curries lately and this one is up there with the best. i used boneless chicken thighs instead. very tasty with lots of zing!
