Ingredients

2 SERVINGS
- 1/2 pumpkin (a medium-sized butternut, deseeded and chopped into 2 to 3cm-sized chunks, substitute with an equivalent-sized chunk of regular pumpkin, if you like)
- 3 Tbsp. olive oil
- 150 grams chorizo sausage (good quality, thinly sliced, I used about ½ a fat sausage!)
- 50 grams feta cheese
- 1 handful pine nuts
- salad leaves (a small bag of your choice of pre-washed)
- 2 sprigs fresh thyme (or a teaspoon of dried thyme, rosemary or mixed Italian herbs)
- salt
- black pepper
- 3 Tbsp. olive oil
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. honey
- pitta bread (toasted)
- Greek yoghurt
