Description
What better way to cool off on a hot summer day than with these Pumpkin and Yogurt Popsicles. These tasty treats combine light plain yogurt, mashed or pureed pumpkin and decadent flavors and spices for cool treat.. They take about six hours to freeze and are not only easy to make, but will become a family favorite at first taste. Summer heat can be beat with these tasty treats. Enjoy!
Ingredients

- 1 cup plain yogurt (light)
- 1 1/4 cups pumpkin (mashed or pumpkin puree)
- 1 1/2 cups molasses
- 1/2 Tbsp. ginger (ground)
- 1 Tbsp. vanilla extract
- nutmeg

Directions
- Strain the yogurt by placing a coffee filter onto a strainer and pouring the yogurt into it. Let the yogurt strain for 3 to 4 hours. Once the liquid has been strained from the yogurt, you will have a thicker consistency.
- Mix the pumpkin, brown sugar, ginger, vanilla, and a pinch of nutmeg with the yogurt. Make sure to taste the mixture in order to see if more sugar is needed.
- Pour the mixture into Popsicle molds and place them into the freezer for at least 6 hours.

Recipe calls for 1 1/2 cups molasses, but in the directions call for brown sugar. Which is it and how much. These sound good and want to make them.
