  • 2 1/4 pounds pumpkin (peeled, seeded and diced)
  • 1 1/4 pounds potatoes (peeled and cut into small pieces)
  • 1 onion (peeled and finely chopped)
  • 2 tablespoons butter (melted)
  • 4 1/4 cups vegetable stock
  • 1 bay leaf
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream
  • 3 tablespoons pumpkin seeds (dried)

    Directions

    1. Sauté the pumpkin, potatoes and onion in hot butter in a saucepan. Pour in the stock, add the bay leaf, and bring to a boil. Add the lemon juice and season to taste. Simmer over medium heat for about 25 mins.
    2. Remove the bay leaf, puree the soup, and stir in the cream. If you like, serve the soup in the hollowed out and carved pumpkin, sprinkled with the pumpkin seeds.
