- 15 oz. canned tomatoes (drained and liquid reserved*)
- 1 lb. pumpkin (about 1/2 one small pumpkin or any winter squash, butternut, acorn, etc.)
- 3/4 cup soymilk (or other non-dairy milk)
- 1/2 cup nutritional yeast
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/2 tsp. mustard powder
- 1/2 tsp. spanish paprika
- 1 Tbsp. Tahini (optional)

SO BLOOMING GOOD! The creaminess of the pumpkin with the texture of all the wonderful veggies and beans and all combined beautifully with the cheesy sauce - a fantastic family meal and super easy to put together
