- 1/2 cup greek yogurt (low fat vanilla, or plain vanilla yogurt)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. ground cloves
- 1/2 tsp. baking powder
- 2 egg whites (or one whole egg)
- 1 1/4 cups old-fashioned oats
- 1/2 cup pumpkin puree
- 1/4 cup water
- 1 Tbsp. raw honey
- 1/2 tsp. vanilla extract
- 4 packets Truvia (or sweetener of choice to taste)
- 1/2 cup carrots (finely minced, best if done in a food processor)
- 1/4 cup carrots (grated, to be stirred into the batter)
- 1/2 cup low fat cream cheese
- 1/4 cup maple syrup
