- 1 Tbsp. lemon juice (or apple cider vinegar)
- 1 1/2 cups brown rice flour (organic, I use Bob’s Red Mill flours)
- 1 cup tapioca starch
- 1/2 cup sorghum flour
- 2 Tbsp. flax seed meal
- 1 tsp. kosher salt
- 1 tsp. baking soda (aluminum free)
- 1 1/2 tsp. baking powder (aluminum free)
- 2 tsp. pumpkin spice
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 2.5 oz. coconut oil (room temperature)
- 2 Tbsp. pure maple syrup (Grade B)
- 2 cups pumpkin puree (fresh roasted, or one 15 oz can pure pumpkin)
- 1 tsp. pure vanilla extract
- 1/4 cup cane sugar (evaporated, or coconut sugar)
- 1 banana (mashed)
- 1 whipped topping (tub CocoWhip, by So Delicious Dairy Free)
- maple syrup (Grade B)
