Description
Like most candy recipes, there isn’t room for ingredient substitution. I always recommend following the recipe as written. I find these truffles get even better- and the pumpkin flavor becomes more prominent- after a day or two in the refrigerator. Dip in white chocolate or dark chocolate for a fabulous fall treat!
Ingredients

- 2 oz. full fat cream cheese (softened to room temperature)
- 2 Tbsp. confectioners sugar
- 1/3 cup pumpkin puree
- 1 3/4 cups graham cracker crumbs (about 12 full sheet graham crackers)
- 1/2 tsp. pumpkin pie spice
- 1/2 tsp. ground cinnamon
- 4 oz. white chocolate (coarsely chopped and melted)
- 10 oz. white chocolate (or semi-sweet, coarsely chopped)
- graham cracker crumbs (optional garnish: extra, or cinnamon/sugar)

Yummy! At first it tasted like graham cracker only, but after a few hours and sprinkling pumpkin pie spice on top, it tasted just like I expected.

It was really good. I used milk chocolate--I definitely recommend a dipper. I did not use one and putting the chocolate on was difficult to spread it out evenly and it also ended up looking kinda messed up but still tasted delicious! Brought to friends for thanksgiving and they were eaten ASAP

I made these this week for a work potluck and they were a humongous hit! I say “were” because I made a double batch and they disappeared within an hour. These are incredibly easy to make and perfect for allowing my 6 year old to help.

So good! I would definitely make them again. I put eye balls on them and made them ghosts.

It was ok. Not as sweet as I expected. Might need more cream cheese and powdered sugar.
