Line a large baking sheet with parchment paper. Set aside.

Drain the garbanzo beans into a fine-mesh sieve and rinse thoroughly with cold water. Turn the garbanzo beans onto a clean dishcloth, and pat dry with paper towels.

Transfer the garbanzo beans to a large mixing bowl. Drizzle with canola oil and vanilla extract. Toss with a rubber spatula until the garbanzo beans are evenly coated. Arrange the garbanzo beans in an even layer on the baking sheet.

Roast the garbanzo beans on middle rack of oven for 15 minutes, then remove pan from oven.

Add the brown sugar, pumpkin pie spice, and salt to the garbanzo beans. Toss with a rubber spatula until they are evenly coated in the spice mixture. Return to the oven and roast, shaking the pan once during the cook time, until the garbanzo beans are slightly caramelized and crisp, 20-25 minutes.
