Ingredients

2 SERVINGS
- 1 cup raw, unsalted cashews
- 3 cups filtered water
- 1/2 cup espresso
- 1/3 cup unsweetened canned pumpkin
- 1/4 cup pure maple syrup (plus more to taste)
- 1 1/4 tsp. pumpkin pie spice (plus more to garnish)
- 1 tsp. minced ginger
- 1 tsp. natural vanilla extract
- 1/8 tsp. sea salt

Directions
- To soak the cashews, either cover with filtered water for 2 hours or cover with boiling water for 10 minutes, drain, and discard the soaking liquid. Do not use the soaking liquid to make the drink.
- Throw all of the ingredients into your KitchenAid® blender in the order listed. Secure the lid, and blend on high for 5 minutes until piping hot.
- Alternatively, blend on high for about 60 seconds until smooth and creamy. Transfer the mixture to a small saucepan, and warm on medium-low heat for 2 to 3 minutes until hot.
