  • 1 cup heavy cream
  • 2/3 cup light brown sugar (packed)
  • 3/4 teaspoon grated lemon zest (bright yellow parts only!)
  • 1 teaspoon Saigon cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg (freshly, I don’t actually measure this, just a few passes of the nutmeg over a microplane will do it.)
  • 1 teaspoon vanilla
