- 3 Tbsp. butter (softened)
- 1/4 tsp. salt
- 1 1/2 cups brown rice flour
- 1/2 cup quick oats (ground up, my kitchen hack is that I grind up quick oats in my blender and use it as oat flour as needed)
- 4 tsp. baking powder
- 1 cup full fat coconut milk
- 2 eggs
- 1 tsp. vanilla
- 2 Tbsp. chia seeds
- cooking oil (spray - for waffle iron)
