- 2 1/4 cups gluten-free rolled oats (Bob’s Red Mill)
- 1/2 cup gluten free oat flour (Bob’s Red Mill)
- 1 1/4 tsp. baking powder (I recommend aluminum free)
- 1 1/2 tsp. canela
- 1 tsp. ground ginger
- 1/4 tsp. grated nutmeg (freshly)
- 1/4 tsp. kosher salt
- 3/4 cup pumpkin puree (pure, NOT pumpkin filling)
- 1 cup milk (choice, skim, almond, soy, etc.)
- 1 large egg
- 1/4 cup pure maple syrup (I like Grade B)
- 2 Tbsp. creamy peanut butter (almond butter, or other nut butter of choice)
- 1/2 cup chopped nuts (desired mix-ins:, dried cranberries, chocolate chips, diced apricots, coconut, I used 1/4 cup cranberries and 1/4 cup mini chocolate chips)
