- 1 spray vegetable spray
- 12 cups muffin
- 2/3 cup pastry flour (sifted)
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. ground nutmeg (fresh)
- 1/2 tsp. fine sea salt (Or use kosher salt.)
- 1 stick unsalted butter (cold and cut into 1/2 inch chunks)
- 1/3 cup superfine sugar
- 4 eggs (large, at room temperature, and lightly beaten)
- 15 oz. solid-pack pumpkin
- 1/2 cup pecans
- 1/2 cup sweetened shredded coconut
