Description
Embracing the flavors of autumn, this pumpkin hummus combines the classic fall ingredient with the classic mediterranean dip. Roasted pumpkin is chopped and added to a blender with the rest of the usual hummus ingredients to be blended until smooth. Season to your individual taste and serve with a bit of harissa sauce for additional spice. Best served with fresh veggies, a warm pita, or crunchy pita chips. This hummus is vegetarian, vegan, and gluten free.

- 400 grams pumpkin (peeled and halved)
- 400 grams chickpeas (canned, drained)
- 2 cloves garlic (peeled and chopped)
- 2 Tbsp. tahini paste
- 1/2 Tbsp. harissa (sauce)
- 2 Tbsp. olive oil (+ a little extra for garnish)
- 150 mL water

Directions
- Pre-heat the oven to 200C.
- Wrap the pumpkin in aluminum foil previously brushed with oil, as ‘en papillote.’
- Place on a baking tray and cook for 45 minutes or until soft and tender. Leave to cool.
