- 175 grams muscovado sugar (dark brown)
- 3 large eggs
- 60 mL milk
- 300 grams pumpkin puree (* If you don’t want to use pumpkin in this recipe simply leave it out and add an extra 120ml, 1/2 cup milk to the mixture.)
- 360 grams flour (plain, all-purpose)
- 1 1/2 tsp. baking soda
- 2 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 2 Tbsp. stem ginger (finely chopped, optional)
- 5 Tbsp. milk
- 5 Tbsp. whisky
- 1/2 cordial
- 1 tsp. extract
- 180 grams sugar (confectioners’, sifted)
