Love these cookies! I replaced half of the chocolate chips with dried cranberries and roasted pumpkin seeds. Delish! These cookies freeze well. Just pop in the microwave for 15 seconds and they’re like fresh baked!

My new favorite cookie recipe! The texture of the cookie - so soft and fluffy - was especially nice. Not dry or crumbly at all. I reduced the amount of chocolate chips just a smidgeon for my own preference, but thought they were just the right amount of sweet with the hint of pumpkin. Also should note, I doubled the recipe, which made exactly 6 dozen cookies. Just awesome! :-)

What happened? I followed the recipe exactly and ended up with cookies that look good, but aren't. They aren't sweet enough (not sweet at all, really) and they don't taste like pumpkin either. Find a new cookie recipe!
