I have made this several times and it is fantastic! Even the preschool class loves it! Always moist and delicious. I add extra vanilla and spice, but that's my preference. My favorite way to make this recipe is making it into muffins - I fill the cups 3/4 and check them starting at 20 minutes. I've made them different ways, including with extra dark chocolate chips or with dried cranberries and brown sugar frosting. Yum!

I have made this recipe twice now and it always comes out fantastic! I didn't have loaf pans so I used a 9"x13" pan and then cut them into loaves.
