I've made this several times. All I ever had was the larger cans of pumpkin and just went ahead and used it. Never looked back. Don't worry it cooks up wonderful, you just have to cook it longer (can add a full 2 cups of sugar to adjust for sweetness). I also add more spices... Cloves, allspice etc.
In the finished batter I also add chopped fresh ginger (2-3 Tbl), walnuts and raw green pumpkin seeds. And to finish it off I add toasted pecans on top of the frosting. Yep.... It sounds good because it is.
