- 3/4 cup pumpkin puree
- 1/2 cup tomato paste
- 1/2 cup whole milk
- 1/2 cup white wine
- 1 tsp. chopped fresh thyme (or 1/2 teaspoon dried thyme)
- salt
- freshly ground black pepper
- 1 lb. wide noodles (pappardelle)
- grated pecorino cheese (finely, for serving)
- fresh parsley (chopped, for serving, optional)
