Puffed Rice, Honey and Peanut Bars

  • 1/3 cup granulated sugar
  • 1/2 cup honey
  • 1/2 cup smooth peanut butter
  • 8 1/2 ounces puffed rice
  • 1/2 cup roasted peanuts (chopped)
  • 3 1/2 ounces milk chocolate (melted)

    Directions

    1. Grease and line a 12x8 inch rimmed baking tray with parchment paper.
    2. Combine sugar and honey over low heat. Cook, stirring, for 5 mins, or until sugar dissolves. Remove from heat. Stir in peanut butter then toss with puffed rice and peanuts. Transfer to prepared pan and chill for 45 mins, or until firm.
    3. Drizzle with chocolate then chill for 15 mins, or until set. Cut and serve.
