- 1/2 cup pecans (roughly chopped and toasted)
- 1/2 cup walnuts (roughly chopped and toasted)
- 3 Tbsp. ground flax (or Ground Chia)
- 1/3 cup warm water
- 1 Tbsp. olive oil
- 1 onion (Medium, chopped)
- 2 stalks celery (chopped)
- 2 medium carrots (peeled and chopped)
- 8 oz. mushrooms (Tub, around 2 cups of, sliced)
- 4 cloves garlic (minced)
- 1/2 tsp. salt (or more to taste)
- pepper (Several Grinds of)
- 1 tsp. dried thyme
- 1/4 tsp. cayenne
- 3/4 cup rolled oats
- 1/2 cup flour (whole wheat, all-purpose, or gluten-free blend)
- 2 sheets puff pastry (Thawed, Check to make sure they are vegan, most brands are)
- 2 Tbsp. non-dairy milk (used to brush on the pastry)

yum. homemade puff pastry. missong the celery and pecans but still delicious. i may make a gravy or other sauce to go on theslices next time.

definitely making this again, great substitute for meat for a roast dinner and love that the recipe for makes two. will be having this week for Xmas dinner this year. looks impressive too

Just finished making this and my husband and I both enjoyed it. I didn't change a thing We are trying to Include more vegetarian meals and this will definitely be added to the rotation!!! I need to work on my braiding skills. 👍🏻👍🏻.
