Although I followed the recipe precicely, the muffins turned out very moist, as if not cooked through. I had to bake them for 40 minutes but they were still not ready. I think the balance between the liquid and the dry ingredients is not perfect in the recipe. If I make them again, I'll have to make sure I squeeze out all the liquid from the vegies and add more flour.

These are loved by my picky kids! I replaced the all purpose flour with some cocoa and used extra chocolate protein powder. Chocolate tricks everybody into healthy! I also made them mini muffins - cook for 15 minutes.

Very good ingredients. I had batter left so I baked it in a bar pan. Next time,
I'll skip the muffin pan and cut them in bars.

Great muffins! I added old fashioned oatmeal, bran and coconut oil in place of the applesauce. Great, great recipe!

Turned out delicious! I ate one for breakfast every day for almost 2 weeks. Stored them in the fridge in an airtight container. He did them up in the microwave for 15 seconds
